TO MAKE 12 YOU WILL NEED 125g self-raising flour 125g caster sugar 125g soft butter or margarine 2 free-range eggs — beaten Zest of one lemon 2 tbspns milk Cake decorations of your choice 12 little union flag paper cake cases.
METHOD Turn the oven to 200’C/400’F or gas mark 6.
Place sugar and butter/margarine and lemon zest into large bowl and beat together until the mix begins to take on a lighter colour.
Gradually add the eggs to the mix and beat well as you do so.
Stir in the flour and then add as much milk as will be needed to obtain a dropping consistency.
Divide the mix into the paper cases and bake for about 15 to 20 minutes or until golden brown.
Decorate to suit the occasion.
